810- Cherry & Basil Mojito / موهيتو بالكرز (حب الملوك) والريحان
For the cherry syrup:
70 grams (2.4 oz) red cherries, pitted
1 tablespoon granulated sugar
3 tablespoons water
1 liter (4 cups) sparkling soda
10 red cherries, pitted and halved
12 fresh basil leaves
Juice of 1 lemon
Step 1: Preparing the syrup
1- In a saucepan, over medium heat. Add the fresh cherries, sugar, water, and cook for 5 minutes stirring from time to time with a wooden spoon until the texture becomes similar to jam.
2- Place a strainer on a bowl, add in the cherries jam and press it using a spoon to extract the syrup. Set aside and allow it to cool.
Step 2: Preparing the mojito
3- Place 5 cherry halves, 3 basil leaves, 1 teaspoon of the cherry syrup, 1 teaspoon of lemon juice into the bottom of 4 individual serving glasses.
4- Fill the serving glasses with the sparkling soda and set aside for about 30 minutes in the refrigerator to infuse.
5- Add the ice cubes to the cherry and basil mojito and serve cold.
