972- Lemon and Mint Baby Potatoes / بطاطس صغيرة بالليمون والنعناع
2 small plates
250g (1/2 lb) baby potatoes with the skin on, thoroughly cleaned
45g (3 tablespoons) unsalted butter
Juice of 1 lemon
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
10 mint leaves, finely chopped
1- Place the potatoes in a pot of salted water. Bring the water to a boil, then cook for 10 minutes.
2- Drain the potatoes and set them aside to cool for 10 minutes, then lightly smash them with the back of a large wooden spoon or cup.
3- Place the lemon juice in a large pan over medium heat, then bring the lemon juice to a boil.
4- Add the butter and garlic, then cook for 2 minutes.
5- Add the potatoes, salt, pepper, and mint, then continue cooking for another minute. Serve lukewarm or cold, then enjoy!
