585- Endive and Walnut Salad / سلطة الهندباء والجوز


3 medium endives (450 grams  / 1 pound)
1 tablespoon olive oil
1 tablespoon white vinegar
1 tablespoon mustard
1 tablespoon honey
50 grams walnuts


1- Using a sharp knife, cut the bottom of the endive and 2.5 cm / 1 inch of the top. Slice the endive lengthwise and remove a couple of outside leaves. Cut a V-shape to remove the core of each of the endive halves. Chop the endives and put them in a bowl.

2- In a separate bowl combine the olive oil, vinegar, mustard, and honey.

3- Add the sauce to the endives and mix.
4- Plate the endives and top it with walnuts to add some crunch. Serve Cold.
